Semi - Sweet Wines
Rock River White $15/$6
The base grape is Viognier, by itself, is a wonderful white varietal that will take your senses on an exotic tropical journey, being highly aromatic with sweet perfume and tropical fruit. However, when further infused with a tropical blend of natural ripe mango and savory pineapple, followed by gentle notes of banana & guava, you may as well batten down the hatches and set sail for a tiny island in the south pacific.
Popp’s Bad Apple $15/$6
The Green Apple – Riesling is a refreshing wine that combines the flavors and aromas of apple, pear and grape with a hint of spice. The sweet and tart flavors pair well with ham or Asian dishes. A.O. Popp would have loved this wine!
Rock River Red $15/$6
You will enjoy the super-enhanced Pinot Noir varietal characteristic of fresh red berries and luscious black cherries. This is a fresh sweet take on the earthy Pinot Noir grape by adding black cherry fruit.
Miss Kitty’s $15/$6
The pomegranate's earthy, rich juice balances with Zinfandel's spicy, robust grapes creating a delicate spicy sweetness that has a particular uniqueness on the first sip and leaves you wanting more. Miss Kitty would approve!
Cobblestone Blau $15/$6
Fresh-from-the-field blueberry aromas and flavors blended and aged with the Cabernet Sauvignon grape gives this wine a light, refreshing and irresistible flavor the will sure be a fan favorite. The name comes from the “Cobblestone” streets near our winery and the “Blau” is the German spelling for Blue… (blueberries)

Blacksmith’s TRIO $25/$8
Blacksmith Trio!! It is 100% Cabernet Sauvignon and is our signature Cabernet Sauvignon from Dry Creek Ranch Lodi, CA.
We aged this wine in 3 different Oak barrels; French, American and Hungarian and blended them together to create a taste profile of bold dark berries, hints of cigar and smoke with a solid tannic

Off Dry Riesling $15/$7
This classic German wine will surprise you! It taste sweeter than it really is because of the luscious Riesling grapes! Germany is known for it’s classic Riesling wines… We produced an “off-dry” style of the wine that’s aromatic displaying flowery, almost perfumed aromas with a crisp high acidity… that acidity makes this wine very food friendly.
Gewurztraminer $15/$7
This classic German wine will surprise you! It taste sweeter than it really is because of the luscious Gewurztraminer grapes! You’ll enjoy hints of melon, honey and citrus. On the palate, it starts sweet with a dry finish. A great summer sipper that will pair well with many foods!
Chardonnay $15/$7
Our Chardonnay is un-oaked giving a crisp freshness similar to Pinot Grigio. Aged on lees, it has a hint of yeast and butteriness but has a crisp acidic profile making it very food oriented.

Who isn’t tempted by the sweet Cherry fruit coated by luscious chocolate? To even tempt you more, we’ve made a sweet port wine and blended with sweet cherry juice and chocolate. The wine is the perfect temptation dessert.
Matrimonia $15/$8
Our port style wine aged with Fair Trade Guatemalan Coffee Beans. This wine is the beautiful marriage of a port wine and coffee. If you like dessert wine and coffee... then this will be a treat for you.
German Eiswein $25/$8
Our Riesling Ice wine is a rare gift from a magical Canadian winter and made in the German tradition. Picked at the coldest moment of a winter's night, each frozen grape creates just one drop of Ice wine. One smooth rich, luxurious drop. Knickerbocker Ice is at its best when it's served wintery cold and sipped before dessert, with dessert or even as a dessert!

”Looking for Horsethief - The police are looking for a man giving his name as Harry Sims, who hired a horse and buggy at Jefferson, then came to Watertown the following day and sold the outfit to James Dowd. He claimed that he had been on the road selling household articles, but was tired of it and wanted to dispose of the property. The horse was hired at Tony Boll’s Livery at 123 West Milwaukee St in Jefferson.”
Boll’s Livery Rye Whiskey | Single Barrel 40% ALC./VOL. (80 PROOF) $35
A horse stable has stood on this property for decades prior to the building of Boll’s Livery in 1903. Knowing that Rye grass works well as a feed for many horses, it seemed fitting to name our Rye Whiskey after the first building owner Anton Boll.
Boll’s Livery Rye Peanut Butter Whiskey | Single Barrel 35% ALC./VOL. (70 PROOF) $35
We used our Rye Whiskey and blended smooth peanut butter. It’s not as “sweet” as the national brands, but has the flavor of our smooth Rye Whiskey with peanut butter on the nose and finish.
Goat Island Vodka | Organic Corn Vodka 40% ALC./VOL. (80 PROOF) $22
Our organic corn retains more of its natural sweetness because it hasn’t been hit with chemicals or genetically modified. Because of that, our Vodka starts off a bit sweeter than most 80proof Vodkas and has a subtle flavor with a clean finish. Nose of vanilla and taste of subtle sweetness with a smooth finish.
Goats with summer jobs! The city of Jefferson uses goats to eradicate invasive plant species on a small island north of the confluence of the Rock and Crawfish rivers. If you take a few minute walk just south of our building, you can watch the goats enjoy their time on the island. Occasionally, they’ve fallen in the river and had to be rescued, so you may see some with life preservers.
